Having Trouble Reaching 500 Calories

I was told to always eat your 500 calories, that if you eat less it will hurt you in the long run.  However, I am having the hardest time reaching the 500 calorie mark working with the guidelines my Doctor gave me.  
 
I have 100g of meat twice a day (only allowed beef twice a week)
2 fruits
1 melba toast  
two vegies

What can i add more of to reach my 500calorie goal?  
I am literally at least 50 calories away each day if not more.  Can I eat more chicken or fish to give me more calories?  I have noticed that ever time i eat beef and i get my 500 calories in my body does better than if i only reach 450.
 
Please Help.

You can add Light soups, 1 medium orange, wheat crackers to you diet. Also Coffee (black,0 cals) (with fat-free creamer, 35 cals. trust me I'd rather have it with tons of cream and sugar but you can add LOTS of calories that way so I just got used to drinking it black OR with a very small amount fat free creamer (35 cals). NO sugar. WATER as much as possible.

wow-- you are really having trouble getting in 500 calories???? so this does curb your appetite???

You have trouble to reaching 500 calories and every body have trouble to lose some calorie, both is not good and easy to reached but for all have a program to do consult some doctor for this.

You should be having 2 melba toasts.

Adding extra fruits and starches can hinder and stall your weight loss.
Also, fat free creamer IS NOT allowed as it has artificial sweeteners and chemicals in it that can not only stall weight loss, but make it difficult to stabilize when you reach maintenance.

The only allowed foods on Dr Simeons protocol are as listed:

Meats (100g weighed RAW):
Beef (steak, extra lean ground beef, roast)
Buffalo
Chicken Breast
Crab
Halibut
Lobster
Shrimp
Veal
White Fish (sole, flounder, sea bass, orange roughy, etc)

Vegetables:
Asparagus
Beet Greens
Cabbage
Celery
Chard
Chicory
Cucumbers
Fennel
Lettuce (any kind)
Onions (red, yellow or white)
Red Radishes
Spinach
Tomatoes

Fruits:
Apple
1/2 Grapefruit
Orange
Handful of Strawberries

Starches:
Melba Toast
Grissini Breadstick
Rice Cake

Seasoning Examples:
Apple Cider Vinegar
Basil
Garlic
Liquid Aminos
Marjoram Mustard Powder
Parsley
Pepper
Salt
Thyme
Etc.

Misc.:
1 Tablespoon milk
Juice of 1 lemon
Stevia or flavored stevia
